Is she your boat now Peter?

Re how you are doing all the work singlehanded, how many more years do you think it will take to complete the job?

If you are working for the owner, then surely it would be prudent to take on additional skilled labour to complete the job more quickly?
Otherwise you are probably only just making slight headway over the inevitable depreciation if you are doing it all by yourself (?)

Is this the "Rudy Schaefer" replica, launched in 1967 and built by Goudy & Stevens in Boothbay, Maine, USA? I've seen a report from 2019 that it was in a yard in Italy for a major rebuild.

Or the 1995 replica built in Albany, New York, USA or the 2005 replica built in Varna, Bulgaria?

Sail to Glory movie featured the "Rudy Schaefer" replica built in 1967. https://classicyachtinfo.com/asp_yachts/america-2/
Although Peter has not directly answered which replica he is restoring it appears to be the Rudy Schaefer replica.

Purposeful boat built for speed to beat the English, lovely sailboat. Must be sailed with lots of help.

These were incredibly handy boats designed to nip in and out of harbors quickly in all conditions. *America* could be single handed in moderate conditions and still sail circles around most shorthanded cruisers today. Raising the gaffs takes a little effort, but everything else is high gain and has excellent perturbation response. Boats this size sailed the world with crews of four or five. Sunset cruise schooners are often sailed with just a skipper and 20-30 guests (often designed to be just under 25m), which means they can only spend a little time actually handling the ship.

These four look like they are enjoying themselves -
